Tex-Mex Pasta Salad

Ingredients:
- 3 cups cooked penne pasta
- ½ red bell pepper, diced
- ½ green bell pepper, diced
- ½ yellow bell pepper, diced
- ½ red onion, diced
- 1 cup cherry tomatoes, sliced in half
- ½ cup cilantro, chopped
- 1 avocado, diced (optional garnish)
Dressing:
- ½ cup olive oil
- 2 tsp cumin
- 1 tbsp chili powder
- 1 tsp garlic powder
- Juice of one lime
Directions:
Cook pasta. While it is cooking, dice your veggies.
Combine peppers, onion, cilantro, and tomatoes in a large bowl.
Mix together all dressing ingredients, then pour over your pasta.
Mix thoroughly, then chill in the fridge for 1 hour.
Serve topped with avocado and/or your choice of toppings.
This is a perfect lunch or dinner for summer or great as a side dish to bring to your summer potlucks. It’s easy to make a big batch to feed a group and is perfect as leftovers.

I think I'm going to try this one, but without the avocado. The texture is too squishy for me!
