Tex-Mex Pasta Salad Recipe

Packed full of flavor, this Tex-Mex Pasta Salad is perfect for feeding a large group. Great for summer picnics and potlucks, and a yummy lunch or dinner!

Serves: 8 servings
  • 3 cups cooked penne pasta
  • ½ red bell pepper, diced
  • ½ green bell pepper, diced
  • ½ yellow bell pepper, diced
  • ½ red onion, diced
  • 1 cup cherry tomatoes, sliced in half
  • ½ cup cilantro, chopped
  • ½ cup olive oil
  • 2 tsp cumin
  • 1 tbsp chili powder
  • 1 tsp garlic powder
  • Juice of one lime
  1. Cook pasta. While it is cooking, dice your veggies.
  2. Combine peppers, onion, cilantro, and tomatoes in a large bowl.
  3. Mix together all dressing ingredients, then pour over your pasta.
  4. Mix thoroughly, then chill in the fridge for 1 hour.
  5. Serve topped with avocado and/or your choice of toppings.
