Nothing is more satisfying than a rich and creamy pasta dish after a long frustrating day, but the calories and fat in most traditional pasta dishes can truly kill your diet plans.
This lower fat and calorie version of Chicken Angel Hair Pasta Bake was introduced to me many years ago when I went to a ladies conference with church and a fellow member made it for our potluck lunch.
She said it was found in a cancer recovery cookbook that she was given. I have never located the book and have tweaked it various times until we got the flavor just right for our family but the base is similar to what she presented. We are sure your family will enjoy this yummy casserole too.

Chicken Angel Hair Pasta Bake
Ingredients:
- 1 Pound Shredded Chicken (we prefer boneless skinless chicken breast but you can use thigh or leg quarters just make sure to remove fat and skin)
- 2 Cups Low Fat Low Sodium Chicken Broth
- ½ Package Angel Hair Pasta (approximately 8 oz) cooked until just soft – will finish cooking in oven
- 1/3 Cup Non Fat Sour Cream
- ¼ Cup Skim Milk
- ¼ Cup Grated Parmesan Cheese
- 3 Dashes Hot Sauce
- 1 Teaspoon Dried Italian Seasoning Blend (1/3 Tsp. Oregano, 1/3 Tsp. Thyme, 1/3 Tsp. Basil)
- 1 Teaspoon Garlic Powder
- Black Pepper as desired
I like to boil up a big batch of chicken at the begging of the week. Shredded it up and store it and then it’s ready to go for recipes that night and for a couple of nights to follow.
Boiling chicken is super easy. You just toss it into a pot of water and let the pot reach boiling and continue cooking until your chicken is cooked through. This recipe is also a perfect way to use up leftover shredded chicken.
Get your oven ready, turning it on to 350°F. Prep your casserole dish with non-stick cooking spray.
I love my casserole dish, that I got years ago, the oval shape looks gorgeous and it is perfect for this recipe! Rachel Ray has a similar oval stoneware casserole pan with awesome bright colors to pick from.

Now, it’s as easy as combining all of your ingredients, including your cooked and shredded chicken and your cooked and drained pasta into a large bowl.
Mix together all the ingredients so everything is well coated. Pour all into your casserole dish and bake for 35 minutes or until bubbling and browned around the edges!
Weight Watchers: Angel Hair Pasta Bake Recipe
- 1 Pound Cooked Shredded Chicken (we prefer boneless skinless chicken breast but you can use thigh or leg quarters just make sure to remove fat and skin)
- 2 Cups Low Fat Low Sodium Chicken Broth
- ½ Package Angel Hair Pasta (approximately 8ounces uncooked) cooked until just soft – will finish cooking in oven
- ⅓ Cup Non Fat Sour Cream
- ¼ Cup Skim Milk
- ¼ Cup Grated Parmesan Cheese
- 3 Dashes Hot Sauce (Tabasco or similar)
- 1 Teaspoon Dried Italian Seasoning Blend (1/3 Tsp. Oregano, ⅓ Tsp. Thyme, ⅓ Tsp. Basil)
- 1 Teaspoon Garlic Powder
- Black Pepper as desired
- Preheat oven to 350 degrees
- Spray 9x13 casserole with non stick cooking spray
- In large bowl mix together all ingredients until pasta is coated and everything is well blended
- Pour into casserole
- Bake at 350 degrees for 35 minutes or until bubbling and browned around edges
I often make double or triple batches of this and divide into aluminum baking pans and store in the freezer for up to 3 months. It makes a perfect freezer to oven meal that just has to cook for 15-20 minutes longer to heat through completely.
Makes 6 servings at 4 Weight Watchers Points each.
