This delicious Roasted Tomato Italian Chicken is as pretty on the plate as it is tasty. It’s simple to make with just a few key ingredients you likely already have on hand. It will be a welcome change from your typical dinner routine. It’s a perfect dish for your Valentine’s day romantic dinner for 2.
Roasted Tomato Italian Chicken
Ingredients
- 1 lb boneless chicken breasts
- 3 tomatoes
- 3 garlic cloves, minced
- 2 tsp dried oregano
- 2 tsp extra virgin olive oil
- Salt and pepper to taste
Directions
Preheat oven to 370F.
Slice the tomatoes and set aside.
Season the chicken breasts with the salt, pepper, olive oil, minced garlic, and half the oregano.
Take the chicken to a greased baking sheet and top with the tomato slices.
Transfer the baking sheet to the oven and roast for 20 minutes or until done.
Remove from the oven serve, topped with the remaining dried oregano.

This sounds good and we just started getting fresh tomatoes for southern Florida. That will make them better than hot house tomatoes. Thank you for the recipe.

So, roasting the tomatoes is just a matter of draping them over the chicken before putting it into the oven, right? Is there any chance of them drying out, or do they retain some of their moisture?
