Crockpot Greek Chicken

With the recent opening near our home of a traditional Greek restaurant I have become somewhat infatuated with this crisp clean flavors found in the traditional Greek foods.  This Crock Pot Greek Chicken was born out of desire for that tasty Greek food down the street but not wanting to splurge.  A few very simple ingredients and  you have a fabulous chicken served wonderfully with a side of rice and a nice fresh salad with a little Feta Cheese and a light vinaigrette or on a flat bread with a drizzle of dressing as a wrap.

Crockpot Greek Chicken

Ingredients:

  • 2 Pounds Boneless Skinless Chicken Breasts or Thighs cut into small chunks
  • Juice of 1 Lemon
  • 2 Teaspoons Oregano
  • 1 Teaspoon Garlic Powder
  • 1 Teaspoon Thyme
  • 1 Teaspoon Basil
  • 1 Teaspoon Dried Minced Onion
  • 1 Cup Chicken Broth
  • 1 Cup Greek Yogurt

 

In small bowl mix together oregano, garlic, thyme, basil, and minced onion. Toss in your chicken and coat evenly with spice blend and then place in crock pot.

Crockpot Greek Chicken Prep

Pour lemon juice and chicken broth over chicken and cover. I use a single frozen lemon juice ice cube, rather than juicing a lemon. Cook on medium/high heat setting for 3 hours.

Turn on low and mix in Greek yogurt coating chicken well and blending with juices. Cook for an additional half hour.

Serve with rice, pita, flat bread or salad. I like to serve topped with Pico de Gallo.  Pico de galo

This light and delicious Crockpot Greek Chicken is a great dish to make and share at your next potluck event alongside a basic rice pilaf or side salad.  The flavors are mild but bright and are sure to please a crowd.

My Honey/Hubby gave me (us) a slow-cooker several years ago - and me being a good cook but an "old dog" when it comes to learning "new tricks." So, so far I've only used it a few times and only to make SOUPS.

Now, for a variety of reasons, not the least of which is the (OMG!) arrival of warm, summery weather and a lack of A/C...

So I've just started collecting non-soup/stew crock-pot recipes and it just so happens that GREEK CHICKEN is one of my all time favorite dishes. So I will be trying this recipe THIS weekend ~ and I already pinned it ! (http://www.pinterest.com/pin/534239574520088149/)
