How to make Deviled Eggs


I am writing this for all those of you who have never made deviled eggs before, but love to eat them at the picnics you go to.  They are super easy and tend to be a crowd pleaser, while being quite affordable.  

Children love to help make these, from peeling the eggs, to smashing the yolks, to licking the bowl.  Fun for the whole family.

You start with a dozen hard boiled eggs.  

For those that don’t know how to do that: Start with cold water, place the raw eggs into the water just enough to cover the eggs, then boil them for 15 minutes, then let stand for another 5 minutes.  Then peel the eggs.

I find this is easiest, done under a slight stream of warm water.  The water gets between the membrane and the egg meat to help the shell come off cleaner.

You will notice that I still lost small parts of the egg white.  This is okay, no one will notice once they taste them.

Cut your eggs in half lengthwise. Like shown above.

Place the yolks into a mixing bowl and the egg whites onto your serving dish.

You will notice a slight green on the outsides of my yolks, this is from cooking them too long.  

Again, it does not effect the flavor and no one will notice once they are completed.

Using the back of a fork, smash the yolks into crumbles.

Then stir in the 5 to 6 Tablespoons of mayonnaise or salad dressing, 1 Tablespoon yellow mustard, 1/4 tsp salt, black pepper to taste, and I like a couple shakes of cayenne pepper also.

Mix this all together well until it is blended and creamy.

Then using a two cereal spoons, I scoop about 1/2 Tablespoon of yolk filling then with the back of the second spoon I scrap the filling off, into the 1/2 egg white.

Continue this until all the egg whites are full, then sprinkle with paprika to finish.  Now they are ready to cover and save for the party, or just dinner.

If it is just you and your husband and you only want enough for dinner, just cook as many as you want and fill accordingly.

Ingredients

  4. Using the back of a fork, smash the yolks into crumbles.
