Southwest Chicken Ceasar Salad Recipe
This post brought to you by KRAFT Natural Shredded Cheese and Safeway. All opinions are 100% mine.
Just a few weeks ago, I was able to try a delicious Southwest Chicken Ceasar Salad recipe at Paradise Bakery. I loved the salad, but I didn’t love the price tag. It set me off on a goal to make my own similar copycat recipe that could easily be replicated from home on a budget.

- 2-3 medium boneless skinless chicken breast (2 lbs)
- 1 lime
- 1 Tbls cumin
- 2 1/2 tsp chili powder, divided
- 2 tsp paprika, divided
- 1 tsp oregano
- 1 tsp salt
- 1/2 tsp pepper
Salad-
- 1/2 cup KRAFT Ceasar Dressing
- 1 tsp paprika
- 1/2 tsp cumin
- 1/2 tsp chili powder
- Head of romaine lettuce
- 1 cup KRAFT Mexican Cheddar Jack Cheese
- 1 tomato, diced
- 1 cup tortilla chips, broken
聽
Directions:
Heat the grill to medium heat. Blend a seasoning mix using 1 Tbls cumin, 2 tsp chili powder, 1 tsp oregano, 1 tsp paprika, 1 tsp salt, 1/2 tsp pepper. Add to the bottom of a baking dish.
Flatten your chicken by pressing on top of the breasts to thin out the breasts. This will help them cook quicker and grab more of the seasoning.
Squeeze 1 lime over your chicken breasts, using a brush to spread the juice if needed. Then, dip your chicken into your baking dish coating with seasonings on both sides.

Cook your chicken on the grill, flipping with the one side is complete until your chicken is done, check with a meat thermometer for the proper internal temperature.聽Dice up the chicken into bite size pieces.
While your chicken cooks, prepare the dressing using KRAFT Ceasar dressing blended with paprika, cumin and chili powder. Blend well.

Dice up the head of romaine lettuce and dish into individual bowls. Top with chicken, KRAFT Mexican Cheddar Jack Cheese, diced tomato, broken tortilla chips, and dressing mix.

You can now find KRAFT shredded cheese in a new Stand-Up Pouch which makes serving everyone dinner much easier. The pouch can stand on its own so you don’t have to worry about it tipping over while you reach in a spoon or measuring cup to spread cheese across all the bowls you’ll be serving.

The new pouches use less packaging, without cutting out any of the cheese – you’ll still get two full cups! That makes it not only better for you, but better for the environment too! You can find KRAFT in the new Stand-Up pouches at Safeway Just For You聽stores locally.

This looks mouthwatering! What a tasty salad combo!
What a tasty twist on a classic salad! This is a wonderful summer dinner!
I absolutely LOVE kraft cheeses! They make the best for salads! I love this southwestern twist to the chicken ceasar salad!
I love the Kraft shredded cheeses. They are so much easier to use. I hate having to get out the cheese grater and going to town with a block of cheese. Now Kraft has made it even easier. I won’t worry about placing the bag at the table now. With kids, you can always count on at least one spill, but now the cheese won’t be one of them.
the salad looks yummy! We use Kraft cheese too on our pizza ‘s and taco’s!
This looks great! I love unique salads in the summer.
I’ve always wondered what went into southwest sauce, you can’t buy it here but I absolutely love it. I’ll be trying this one – thanks!!!
Now that I’m trying to really watch what I eat and cut out most red meats, salads have become a staple for me! I quite love chicken as a protein topper on most of my salads, too 馃檪
I love salad with a kick! I would love to make this for dinner.
This looks so yummy! I always buy my cheese bagged like this! I HATE grating cheese!
I totally hate grating cheese, too. Seriously, I am so slow at it that hubby always gets frustrated and takes over! 馃槈
We eat A LOT of salad at my house. I’m going to have to add this recipe into the mix!
What a great take on a salad. I really love it. Salads can be so boring, but this looks like a winner winner chicken dinner.
ok I’m kind of craving this now – lunchtime 馃槈
This looks so yummy! Perfect for summer!
I’m loving that you put tortilla chips into the salad! That is an awesome twist on this 馃檪
