Southwest Chicken Ceasar Salad Recipe

Just a few weeks ago, I was able to try a delicious Southwest Chicken Ceasar Salad recipe at Paradise Bakery. I loved the salad, but I didn’t love the price tag. It set me off on a goal to make my own similar copycat recipe that could easily be replicated from home on a budget.

Southwest Chicken Ceasar Salad



Chicken- 聽

  • 2-3 medium boneless skinless chicken breast (2 lbs)
  • 1 lime
  • 1 Tbls cumin
  • 2 1/2 tsp chili powder, divided
  • 2 tsp paprika, divided
  • 1 tsp oregano
  • 1 tsp salt
  • 1/2 tsp pepper

Salad-

  • 1/2 cup KRAFT Ceasar Dressing
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 1/2 tsp chili powder
  • Head of romaine lettuce
  • 1 cup KRAFT Mexican Cheddar Jack Cheese
  • 1 tomato, diced
  • 1 cup tortilla chips, broken

Directions:

Heat the grill to medium heat. Blend a seasoning mix using 1 Tbls cumin, 2 tsp chili powder, 1 tsp oregano, 1 tsp paprika, 1 tsp salt, 1/2 tsp pepper. Add to the bottom of a baking dish.

Flatten your chicken by pressing on top of the breasts to thin out the breasts. This will help them cook quicker and grab more of the seasoning.

Squeeze 1 lime over your chicken breasts, using a brush to spread the juice if needed. Then, dip your chicken into your baking dish coating with seasonings on both sides.

Southwest Grilled Chicken

Cook your chicken on the grill, flipping with the one side is complete until your chicken is done, check with a meat thermometer for the proper internal temperature.聽Dice up the chicken into bite size pieces.

While your chicken cooks, prepare the dressing using KRAFT Ceasar dressing blended with paprika, cumin and chili powder. Blend well.

Southwest Ceasar Salad with Kraft

Dice up the head of romaine lettuce and dish into individual bowls. Top with chicken, KRAFT Mexican Cheddar Jack Cheese, diced tomato, broken tortilla chips, and dressing mix.

  7. Dice up the head of romaine lettuce. Top with chicken, Mexican Cheddar Jack Cheese, diced tomato, broken tortilla chips, and dressing mix.

  6. I love buying shredded cheese in a bag. It is so convenient and easy for the kids to make their own snacks.

  7. I love the Kraft shredded cheeses. They are so much easier to use. I hate having to get out the cheese grater and going to town with a block of cheese. Now Kraft has made it even easier. I won’t worry about placing the bag at the table now. With kids, you can always count on at least one spill, but now the cheese won’t be one of them.
