I’m a meal planner. I actually plan our menu with easy dinner recipes out for 2 weeks at a time and make only one grocery shopping trip during that time frame. I’ve found that it saves big on time and money for me. It just works for our family. As much as I love to cook, sometimes making dinner every.single.night just seems like a daunting task. Sometimes I can’t think of anything else to add to the menu. And sometimes I feel like making one more big dinner during the course of the week just might send me over the edge into madness. Any other moms out there feel that way? So when you just can’t make one more meal, and you need something super easy and fun and delicious, why not make it a French Bread Pizza Night?
We’re kind of snobs in our house when it comes to sauces. We don’t use a jar of sauce in our home for pastas. I’m Italian, and my husband lived in Italy for 2 years. So it just doesn’t cut it for us. But French Bread Pizza Night is one night where I feel free to cut some corners! Just buy a loaf of French Bread (or 2 or 3, depending on the size of your family!), cut it into slices, and add sauce, cheese, pepperoni, or any other toppings that your family likes. We tend to be purists when it comes to our French Bread Pizzas – strangely enough just sauce, slices of cheddar cheese, & pepperoni. Throw it into a 350 degree oven and watch it until the cheese is nice and melty (10-15 minutes). I, personally, don’t like my FBPs to be too well done (the crust gets way too crunchy!).
And for our family? FBP night always has to be done while watching something on TV! Something about it just calls for TV trays and catching up on our shows. So go ahead and make it a French Bread Pizza night! What’s your family’s go to dinner when you just don’t want to cook?

French bread is great for putting almost anything on it. We like to put bruschetta on it and pop it in the toaster oven.

Oooh this reminds me of the garlic bread pizza I had at Pizza Hut last summer. I have never thought of making french bread pizza on slices like that before. I'll have to try it out! :)
