2-3 medium boneless skinless chicken breast (2 lbs)
1 lime
1 Tbls cumin
2½ tsp chili powder, divided
2 tsp paprika, divided
1 tsp oregano
1 tsp salt
½ tsp pepper
Salad
½ cup Ceasar Dressing
1 tsp paprika
½ tsp cumin
½ tsp chili powder
Head of romaine lettuce
1 cup Mexican Cheddar Jack Cheese
1 tomato, diced
1 cup tortilla chips, broken
Directions:
Heat the grill to medium heat. Blend a seasoning mix using 1 Tbls cumin, 2 tsp chili powder, 1 tsp oregano, 1 tsp paprika, 1 tsp salt, ½ tsp pepper. Add to the bottom of a baking dish.
Squeeze 1 lime over your chicken breasts
Dip chicken into a baking dish coating with seasonings on both sides.
Cook both sides of the chicken on the grill.
Dice up the chicken into bite size pieces.
While your chicken cooks, prepare the dressing using Ceasar dressing blended with paprika, cumin and chili powder. Blend well.
Dice up the head of romaine lettuce. Top with chicken, Mexican Cheddar Jack Cheese, diced tomato, broken tortilla chips, and dressing mix.
