Roasted Brussel Sprouts with Bacon Recipe


Getting our families to eat their greens can sometimes be a challenge. I have found that when the food taste good, they tend to be more agreeable about it. This recipe is one that I have come to love. It is earthy and hearty. Fills you up as a main dish, or can be used as a side to go with a steak or other grilled meats.

Roasted Brussel Sprouts with Bacon

Ingredients:

  • 1 pound Brussel Sprouts
  • 1 Large Potato
  • 1 Sweet Onion
  • 3 cloves garlic
  • 1/3 pound Bacon
  • salt and pepper to taste
  • Balsamic Vinegar

 

Cut the bacon into 1/2 inch pieces and brown till crispy. Remove the bacon and save the grease. Clean and cut the Brussel Sprouts in half. Cut the Potatoes into cubes about the same size as the Brussel Sprouts or smaller. Cube the onions. Slice or chop the garlic. Combine all of these into a bowl and pour the bacon grease over them so that they are coated.

Dump them out onto a big jelly roll pan making sure that the Brussel spouts are cut side down. Preheat your over to 375 degrees then bake these veggies for about 15 minutes.

Stir them and return them to the oven for another 10 minutes. Take them out and drizzle the balsamic vinegar over them and return to the over for 5 more minutes. This just caramelizes the vinegar. Salt and pepper to taste.

Remove them from the pan and add in the crispy bacon. This is ready to eat. I love it as a meal. But you can serve it as a side. Hope you enjoy.
