Pretzel Directions:

Using a dough hook combine the warm water, sugar, yeast, and butter in the bowl of a stand mixer. Set aside for 5 minutes.

With the mixer on low speed combine yeast mixture with the salt and flour.聽Knead the dough on medium speed until it appears to be smooth and pulling away from the side of the bowl. (3-4 minutes)

Add more flour, 1 tablespoon at the time, if the dough is too wet.

Take the dough out, kneading into a ball with your hands.

Pour 3 quarts of water with the baking soda added into a pot bringing it to boil on high heat.

Take the dough out of the bowl and cut聽it into 7-8 equal pieces.聽Roll each of the pieces into a long rope then cut each rope into small bite size pieces. (About 1 inch size).

Spoon several pieces at a time into the boiling water for about 30 seconds.聽Using a large slotted spoon, remove the pretzel pieces.聽Put the pretzel bites onto the lined sheet without touching one another.

Use your beaten egg with water聽combination to聽brush the egg wash onto each pretzel dough bite.聽Sprinkle the tops of each with聽salt.
