I was given an electronic pressure cooker a couple of years back for Christmas. I like to say my life changed that day. It’s been so amazing to just throw everything in a pot, set it, walk away and come back in minutes to perfectly cooked food. I use my pressure cooker for everything. I have made chicken noodle soup with frozen chicken and raw veggies in under 10 minutes. I use my pressure cooker anytime I need to make potato salad, it takes the potatoes 3 minutes to cook once the pressure builds up.
I make this recipe often with my pressure cooker (it can be made on the stove as well) because my kids ask for it. They never quite remember the name of the yummy potato balls, I have to tell them every time it’s called gnocchi. I also love that you can throw any type of veggie in with this recipe. We often make it with carrots, celery and Italian green beans.
- 1 lb ground pork
- 1 can diced tomatoes
- 2 boxes dry gnocchi
- 4 cups beef broth
- Desired veggies
- salt
- pepper
- Combine all ingredients in pressure cooker
- Stir to combine
- Cook for 10 minutes
- Release steam
- Serve

I love Gnocchi, my grandma use to make it homemade in the kitchen and I would help her make it. I love it with butter. Great recipe!
