MAPLE CINNAMON PANCAKES

Breakfast is my favorite meal of the day! I love breakfast foods! I so often have to rush through breakfast getting kids shuffled out the door, but when the weekend rolls along and we get a chance to sit down for a nice breakfast, it’s always fun to try out something a bit different.

I’d be telling you a little lie if I didn’t mention that I’m crazy for cinnamon sugar pancakes. It’s like getting to eat a dessert for breakfast…and I’ll take that any time!

HOW TO MAKE CINNAMON PANCAKES:

Make certain you have all these ingredients handy!

Ingredients:

  • 2 Large Eggs
  • 1 Cup Milk
  • 1/2 cup Vertical (Maple) Water
  • 1/4 Cup Vegetable Oil
  • 2 Cups Homemade Pancake Mix
  • 2 cups Homemade Pancake Mix or store bought pancake mix where you add fresh ingredients
  • Cinnamon Sugar mixture

Directions: 

Start by beating together your eggs, milk, vertical water, and oil until well blended. The vertical water gives it the beautiful maple flavor without being overly sugary like maple syrup. (You don’t want these Maple Cinnamon Pancakes too sweet!)

Next, add in your homemade pancake mix dry ingredients.

Don’t be afraid of the word homemade, it uses the most basic ingredients of flour, salt, sugar, etc and takes just a minute to make a big batch. You’ll quickly wonder why you ever bought the bagged mix.

Mix the wet and dry ingredients together until mostly smooth and well blended. A few lumps are fine, but you don’t want your mix super lumpy.

Now, scoop 1/4 cup or so of mix onto a hot griddle and cook for 2-3 minutes on each side or until golden brown. You’ll know it’s time to flip your pancakes when you start seeing bubbles form on the still doughy side.

When your pancakes have cooked on both sides, remove from the griddle and lightly butter, if desired. Then, sprinkle the tops of your pancakes with cinnamon sugar. I have these awesome dredge shakers I use that make it so very easy! I keep one always filled with cinnamon sugar and one filled with powdered sugar as we’re always topping our foods with one of the two. They aren’t too expensive and come in a two-pack on Amazon.

These pancakes turned out so delicious with the slight sweetness from the natural maple water. My kids of course love syrup which is sticky, messy, and so overly sweet that I usually feel sick after too much syrup. Making the pancakes themselves have the maple flavoring was perfect! They weren’t overly sweet and there was no messy syrup to clean up! In fact, my little ones just picked up their pancakes and ate them without their forks. (Less dishes for me!)

A: Absolutely. If the maple flavoring isn’t for you, no worries. Just leave that step out and complete the remainder of the recipe.
