Maple Cinnamon Pancakes Recipe

  • 2 Large Eggs
  • 1 Cup Milk
  • ½ cup Vertical (Maple) Water
  • ¼ Cup Vegetable Oil
  • 2 Cups Homemade Pancake Mix
  • 2 cups Homemade Pancake Mix or store bought pancake mix where you add fresh ingredients
  • Cinnamon Sugar mixture
Directions:
  1. Start by beating together your eggs, milk, vertical water, and oil until well blended. The vertical water gives it the beautiful maple flavor without being overly sugary like maple syrup. (You don't want these Maple Cinnamon Pancakes too sweet!)
  2. Next, add in your homemade pancake mix dry ingredients.
  3. Don't be afraid of the word homemade, it uses the most basic ingredients of flour, salt, sugar, etc and takes just a minute to make a big batch. You'll quickly wonder why you ever bought the bagged mix.
  4. Mix the wet and dry ingredients together until mostly smooth and well blended. A few lumps are fine, but you don't want your mix super lumpy.
  5. Now, scoop ¼ cup or so of mix onto a hot griddle and cook for 2-3 minutes on each side or until golden brown. You'll know it's time to flip your pancakes when you start seeing bubbles form on the still doughy side.
  6. When your pancakes have cooked on both sides, remove from the griddle and lightly butter, if desired. Then, sprinkle the tops of your pancakes with cinnamon sugar.
