Crock Pot Shredded Beef Tacos Recipe

While I grew up eating what I now refer to as the American version of a beef taco, I found as an adult that I much prefer the milder flavor and taste of a traditional shredded beef taco.  This Crock Pot Shredded Beef Tacos recipe is one I developed in an effort to satisfy that craving without having to locate a local authentic Mexican food truck.  While they are quite simple, they are also very rich in flavor and perfect for a quick evening meal when you’ve had a long day at work.

Ingredients:

  • 2-3 Pound Beef Chuck Roast
  • 1 Tablespoon Cumin
  • 1 Yellow Onion Sliced Thin or diced
  • 2 Jalapenos Sliced Thin or diced
  • 1 Tablespoon Garlic
  • 2 Teaspoons Salt
  • 1 Teaspoon Black Pepper

 

Shredded Beef Tacos

Directions:

Place your roast in the bottom of your slow cooker. Combine seasonings and sprinkle on top of your meat. Toss your onions and jalapenos into your slow cooker and cook on medium or high heat for 4-5 hours.

Shred cooked beef with forks and serve with corn tortillas, lettuce, black beans, green onions, tomato and cheese. Select your favorite toppings.

We absolutely love this recipe. There aren’t a lot of recipes where my kids go back for seconds and thirds, but this one they do. Best of all, it is so easy to make that it’s a perfect choice for a weeknight meal.

One of our favorite twists with these Crock Pot Shredded Beef Tacos is to serve them with a bit of Feta cheese instead of the classic shredded cheddar you are familiar with.  Not only does it give a bit of bite but it is also creamy and goes well with the richness of the beef.
