Green Chili Cheesy Polenta Recipe
My brother made an amazing green chili polenta. Ever since then I was craving it. Polenta is creamy and filling. It makes a good side dish, or sometimes I fry a bit up for breakfast because to me, polenta is a bit of a comfort food.

- 1¼ cup yellow corn meal
- 3 cups of water (divided)
- 1 tsp salt
- 2 Tbs butter
- ½ cup Salsa Verde
- ½ cup shredded cheese
- Combine 1½ cups of water, salt, salsa verde and butter in a sauce pan.
- Bring to a boil
- Mix cornmeal and remaining water in a small bowl.
- Add corn mixture to the bowling water, stirring constantly.
- Reduce heat to low
- Cook for 5 minutes or until mixture is thick, stirring constantly
- Remove from heat
- Add Cheese
- Pour polenta into a loaf pan
- Refrigerate for 1-2 hours until set
- Cut into thin slices
- Fry pieces until golden brown (butter is best)
- Serve hot
