Chicken Pot Pie Noodles Pasta

Do you ever get tired of your dinner routine? Chicken dinners are great for making inexpensive and healthy meals, but they can start to feel the same when it’s meal after meal. We’ve mixed up our routine with this Chicken Pot Pie Noodles recipe.

Ingredients: 

  • 2 cups uncooked egg noodles
  • 2 cups vegetable stock
  • 1 cup heavy cream
  • 陆 cup frozen peas
  • 陆 cup frozen corn
  • 陆 cup diced carrot
  • 2 large celery ribs, sliced
  • 1 cup diced/cubed chicken pieces
  • 1 tbsp butter
  • 1 tsp minced garlic
  • 陆 tsp paprika
  • 陆 tsp salt
  • 陆 tsp pepper
  • 录 cup breadcrumbs for topping (optional)

Directions: 

In a large pot or Dutch oven, heat peas, carrots, corn, garlic, and butter over medium/high heat until soft.

Add in chicken, and cook for another 5-7 minutes, stirring frequently.

Add in all remaining ingredients, cover, and cook in the oven at 400 degrees for 35 minutes or until noodles are tender.

Serve in bowls, and sprinkle with breadcrumbs if desired.

  2. This is awesome! I don’t like Chicken Pot Pie because I don’t like the crust part. So if I make this I get all the good parts. I pinned for later.

    1. I haven’t tried to cook it the rest of the way on the stove top, but absolutely I think that would work just fine. Just watch for the noodles to be soft and it should be good to go. I would turn it down to a simmer and let it cook on simmer for about 15-20 minutes. If you try it, come back and let us know how it turned out and I’ll update the recipe!
