Truffle Love Valentine’s Day Cake

Have you already laid out your Valentine’s day plans? I adore my husband, but he never plans anything for Valentine’s day. So this year, I’ve decided to make my own plans for the evening (for the two of us, of course).

My plan is to make a fast and easy stress free dinner for the kids. Then, have a recipe and everything ready to cook a nice fancy meal together. My husband is a great cook, but most of the time I let him cook while I wrangle kids or try to spend a few minutes playing catch-up.

I think we will have a lot of fun cooking together and talking and unwinding from a busy Friday. After dinner, I’m pulling out a slice of They Call It Truffle Love cake to share.

I picked up this came a couple of days ago at my local Cold Stone Creamery and we of course all had to dig in and give it a try, just to make sure it was good, of course. I also sliced off a piece and put it away to save it for me and my sweetie to share next week.

They Call It Truffle Love is a rich cake made with layers of moist Red Velvet cake and Fudge Truffle Ice Cream. Sealed with a Fudge Ganache and decorated with chocolate shavings. It might feel like chocolate overload, but it sure doesn’t taste like it. I’m not one that usually springs for chocolate ice cream, I prefer strawberry or vanilla, but my first bite and I was completely hooked! It’s so rich and so good paired with the red velvet cake.

Don’t judge the costumes, my kids can almost always be seen dressed up. They plowed through their cake and begged for seconds! Since we don’t do dessert every night, they have been working hard to show me how clean their bedrooms and family room and then sneakily asking me if they can have more cake!
