I absolutely love desserts with strawberries, and this one is no exception. This blends a creamy, homemade strawberry mousse with a rich strawberry gelatin puree and a homemade whipping cream layer for a delicious dessert. Not only will it taste great, it’s a dessert that is perfect for a party as it looks pretty, too!
Homemade Strawberry Mousse
- 1 package Unflavored Gelatin
- 2 1/2 cup Fresh Strawberries
- Juice of 1/2 Fresh Lemon
- 1 cup + 1 tablespoon Sugar
- 1 1/2 cups Whipping Cream
Directions:
Wash, hull and slice your strawberries. Puree the strawberries in a food processor.
Strawberry Layer: Scoop 1 cup of strawberry puree into a small sauce pan and simmer until thickened. Set aside to cool.
Strawberry Mousse Layer: Pour 1/4 cup of cold water into a glass measuring cup and sprinkle gelatin over it. Allow the gelatin to set for 2 minutes. Microwave on high for 40 seconds, then stir. Allow to stand another 2 minutes.
Whip up 3/4 cup of whipping cream until it can stand in a peak.
Add lemon juice and 1 tablespoon of sugar to the remaining strawberry puree. Gently whip the gelatin mixture, then combine with the strawberry and lemon juice mixture. Fold into your whipped cream until thoroughly mixed together.
Whipped Cream Layer: Prepare the remaining whipping cream using the remaining 1/2 cup sugar and 3/4 cup heavy whipping cream, beating together until it forms stiff peaks.
Now, Layer your dessert alternating strawberry mousse, strawberry puree, and whipping cream. Garnish with a strawberry and serve!

This is one of those times where you wish you could reach into your screen and pull out what your looking at. This Strawberry Mousse looks like a dessert that would be served at a 5 star restaurant. To say it looks delicious is an understatement.
