Southwest Roasted Potatoes Recipe


I’m all about easy recipes. Dishes that you can quickly throw together and toss in the oven and they’re ready before you know it. But I also want my side dishes to be packed with yummy flavor and be healthy, too. This recipe uses red potatoes, a coating of Mazola corn oil, and a handful of seasonings and you’re done!

Ingredients

  • 2 lbs. Scrubbed red potatoes
  • 3 Tbsp. Mazola Corn oil
  • 1/8 teas. Cayenne Pepper
  • 1/2 teas. Garlic powder
  • 1 teas. Kosher Salt
  • 1 teas. Chili powder
  • 1/2 teas. Ground Cumin
  • 1 teas. Dried Oregano

These potatoes are so easy to make, you’ll love adding them as a side dish to your favorite dinner recipes. Start by preheating your oven to 375° F. In small bowl combine all of the spices.

Southwest Roasted Potatoes Cut potatoes into 1-inch cubes and put into large bowl. Add Mazola Corn oil and toss to coat. Next, you will add 1/2 of the spice mixture at a time and toss to ensure all potatoes get seasoned.

Southwest Roasted PotatoesSpread seasoned potatoes on rimmed baking sheet in single layer. Try to spread them out as much as you can to maximize browning. Bake in 375° F oven until golden brown approximately 50-60 minutes.
