- Southwest Roasted Potatoes
- Ingredients
- 2 lbs. Scrubbed red potatoes
- 3 Tbsp. Mazola Corn oil
- ⅛ teas. Cayenne Pepper
- ½ teas. Garlic powder
- 1 teas. Kosher Salt
- 1 teas. Chili powder
- ½ teas. Ground Cumin
- 1 teas. Dried Oregano
- Preheat oven to 375
- In small bowl combine spices.
- Cut potatoes into 1 inch cubes put into large bowl. Add Mazola Corn oil and toss to coat.
- Add ½ of the spice mixture at a time and toss to ensure all potatoes get seasoned.
- Spread seasoned potatoes on rimmed baking sheet in single layer. Try to spread them out as much as you can to maximize browning.
- Bake in 375 oven until golden brown approximately 50-60 minutes.
