L’eggo my Eggo Waffle Taco Recipe


I grew up with the famous slogan to “L’eggo my Eggo” and it is just the perfect sentiment for this weeks recipe for Waffle Tacos. We had so much fun with this recipe for dinner as part of our waffle week.

Waffle Taco Recipe

Ingredients:

  • Eggo Waffles
  • Refried Beans
  • Tomatoes, diced
  • Onions, diced
  • Cilantro
  • Cheese, grated
  • Sour Cream

Directions to create a waffle taco

Directions:

  1. Toast your waffles according to the package directions.
  2. Next, heat the refried beans and spread a thin layer of beans over your waffle.
  3. Layer your taco with your favorite toppings including cheese, onions, tomatoes, cilantro, sour cream, and any other toppings your family may enjoy.

Then, tell your family and friends to take their hands off your Waffle Taco! That’s right, “L’eggo My Eggo” waffle taco! This was a really fun recipe and my kids quickly gobbled it down. The waffles are a softer shell than a crisp taco shell so they won’t hold firm in the taco shape if you set them down. We just kept them in our hand though it would be easy enough to set them down and fold it back up as you pick up your taco. My kids thought it was so fun to have waffles as part of our tacos and it really made a unique meal!
