Easy Lasagna Soup One Pot Recipe

One Pot Lasagna Soup

Ingredients:

  • 3 cups vegetable stock
  • 1 can tomato sauce
  • 1 can diced tomatoes (sauce in)
  • 2 cups uncooked bowtie pasta
  • 1 cup mozzarella cheese
  • ½ green bell pepper – diced
  • ½ onion – diced
  • 2 tsp minced garlic
  • 2 tsp dried oregano
  • 1 tsp fresh or dried chopped parsley
  • salt /pepper to taste

Dice bell pepper and onion, and cook it over medium-high heat in a Dutch oven with garlic and a little oil until just soft.

Add in all remaining ingredients except cheese, cover, and cook in the oven at 400 degrees for 30 minutes.

*Check after 15, and add more liquid if needed.

When noodles are soft and fully cooked, remove from oven, sprinkle with mozzarella cheese, and serve in bowls.
