Weight Watchers: Chunky Crockpot Tomato Soup


As a child I always looked forward to the days that cooler weather meant I got homemade tomato soup and a grilled cheese sandwich for lunch. 

This Weight Watchers Chunky Crockpot Tomato Soup is one I came up with out of necessity when attempting to follow the Weight Watchers program yet continue to have all of my favorite foods at the same time. 

It is simple, delicious and full of hearty veggies that make it healthy and satisfying.

Crockpot Tomato Soup

Ingredients:

  • ½ Small Onion Diced (approximately ¼ cup diced)
  • 1 14oz can Low Sodium Low Fat Beef Broth
  • 1 12oz can Low Sodium Tomato Sauce
  • 2 Cups Peeled and Chopped Fresh Tomatoes (1/4” pieces or smaller if possible)
  • 1 small zucchini peeled and shredded
  • 1 Teaspoon Dried Basil
  • ½ Teaspoon Dried Oregano
  • 1 Teaspoon Teriyaki Sauce
  • ½ Cup Water

How to Make Tomato Soup:

Prep your vegetables by dicing 1/2 of a small onion, peel and chop 2-3 tomatoes, and peel and shred one small zucchini. If you have a peeler with the razor slicing back, it works perfectly to shred your zucchini right down the stalk of the vegetable.

Combine all your ingredients into a crock-pot and stir until well blended. Cook on the lowest setting using low, not warm. Cook for 3 hours, stirring occasionally. Serve the soup with low fat crusty bread or Croutons.

Crockpot Chunky Tomato Soup

I love using the lower calorie wheat bread and 2% sliced cheddar cheese for a lower fat “grilled” cheese.  Rather than cooking in traditional butter or margarine I simply pop them into my toaster oven or in oven on broil to toast and melt the cheese.  I can have one of my favorite childhood meals at a fraction of the calories.

Makes 4 servings of soup at 3 Weight Watchers Points per serving (traditional – points plus 1 ½ points)

Tomato soup always reminds me of growing up. Every Sunday, my family would make grilled cheese sandwiches and serve them with canned tomato soup.

This recipe has completely changed the way I think about Tomato Soup. It’s absolutely delicious and nothing like the traditional canned soup that lacks seasoning and flavor.
