Easy Dinner Recipes: Italian Beefaroni Casserole Recipe

Does your family enjoy Chef Boyardee products? How about easy dinner recipes?  Did you know that you can use Chef Boyardee products as an ingredient in a recipe? I had no clue until I joined in the challenge to try out one of the Chef Boyardee inspired recipes on my own! My boys really enjoy Ravioli and Beefaroni but we have only really used it as a meal in itself for lunchtime. When I checked out some of the recipes available, I couldn’t believe all the different ways you could incorporate these canned goods into a full hearty dinnertime meal for the family!

Preheat oven to 375°F. Spray 8×8″ glass baking dish with cooking spray. Add 2 15oz cans of Chef Boyardee Beefaroni Pasta, 1 can undrained Hunt’s Diced Tomatoes-No Salt Added, 2 ounces of cream cheese cut into small pieces, and 1/2 teaspoon of dried Italian seasoning to the dish and stir. Cover and microwave on high for 2 to 3 minutes or until the cream cheese softens and blends when stirred. Meanwhile, combine 1/3 cup Italian-style bread crumbs, 1/4 cup grated Parmesan cheese, and 1 tablespoon Blue Bonnet stick butter, melted. Sprinkle over warm Beefaroni mixture. Bake 15 minutes or until the mixture is hot and the crumb topping has browned lightly.

This recipe turned out actually really good! The sauce came out creamy with the added cream cheese and the bread crumb topping really made the dish. Plus, my boys recognized the Beefaroni which made mealtime easy without complaint! The recipe didn’t make a ton, though, and next time I will probably make 1.5 times the recipe to give fuller portions. This recipe would be perfect to serve with some rolls and a salad.
