Christmas Cookies ~ Holiday Ginger Cookies


We are still thinking Christmas in July here and have some simply decorated but beautiful Christmas Cookies for today. This Holiday Ginger Cookie is a delicious spiced cookie that can be made into little cookie sandwiches or decorated individually. 聽

The spiced cookie and royal icing come together for just the right amount of sweet.

Christmas Cookies ~ Holiday Ginger Cookies

Ingredients:

  • 1/2 cup softened butter
  • 3/4 cup light brown sugar
  • 1 large egg at room temperature
  • 1 tsp vanilla extract
  • 1 1/2 cups flour
  • 1/2 tsp ginger
  • 1/2 tsp nutmeg
  • 3/4 tsp cinnamon
  • 1/8 tsp ground cloves
  • 1/4 tsp salt

Instructions:

Preheat oven to 350 degrees

In bowl of stand mixer, combine softened butter and light brown sugar.  Blend on medium for 2 minutes until mixture is fluffy.

Add egg and vanilla to butter mixture and continue mixing on medium until very smooth.

Mix dry ingredients together in a separate bowl and gradually add the cream mixture at low speed until completely combined.

Drop cookie dough by heaping tablespoons onto non stick cookie sheets.  Cookies should be spaced 2 1/2″-3″ apart.

Bake in preheated oven for 11-13 minutes.  Remove from oven and cool on baking sheet for 5 minutes before transferring to cooling rack.  Allow cookies to cool completely before decorating.

There are many ways to enjoy these Christmas Cookies.  They are delicious plain or decorated with a royal icing or made into sandwich cookies with an icing in between.  I decorated some single cookies and made a few into sandwich cookies.

For the sandwich cookies, a buttercream or maple cream cheese frosting makes a great filling!

To decorate the cookies as shown, fill a piping bag fitted with a small decorating tip with white royal icing, red royal icing, and green.  Pipe thin white flowers or other designs onto the cookies.  Add holly leaves and berries to give the cookies extra color.  Thin a small amount of white royal icing with water and coat some of the cookies as shown.
