Almost everyone loves the crusty edge to a brownie, I know I do.  Well when you make them into brownie bites, they are a bite of wonderful.  Or two bites if you want to savor just one piece.

I have searched high and low for the perfect brownie recipe.  This is a no fail method that I happened to stumble upon when playing with a brownie mix.  I hope you will give it a try.

To start with you can use any store bought brownie mix.  I usually use the cheapest one I can buy.

I spray my little muffin tins, then cut the bag open.  Add 1 egg, 1/2 cup veggie oil, and a scant 1/2 cup of water.  What does scant mean you ask?  Look below and you will see.

Not quit to the top, that is what scant means.  Dump that in and stir it all up just until it is mixed. Then I use a small scooper to drop the dough into the mini muffin tins.

This past Christmas, I broke up candy canes into small pieces and placed one in each bite of brownie. Then dusted them with powdered sugar.  These were perfect for the cookie exchange I host every year.  Today, I broke up a dark chocolate mint bar I had and placed a piece on 12 of these bites and placed a piece of walnut on all the others.

I then placed all three pans of dough into a preheated 350 degree oven for 12 minutes.  I took them out of the oven, set them on cooling rakes for about 10 minutes, then took the bites out of the pans to continue to cool on a baking rack.  Did I mention I tasted one?  Well I did and it was really good.  Wish you could have been here.  There are plenty to go around.  You can also bake this mix in a regular 9×13 cake pan and bake for about 20 minutes.  That works too, especially for people who like the center cuts.  Which ever way you like them, I hope you give this a try and let me know what you think.  Granny
