Acorn Squash Stuffing Recipe


Stuffing is a Thanksgiving staple, but that doesn’t mean it has to be restricted to just inside the bird. This year, try something different and bake stuffing inside an acorn squash! It will look really unique and festive on your table setting and will be a hit with your guests. This recipe was inspired by the acorn squash stuffing recipes on Pinterest, like this pin,聽but I’ve made it my own.

Acorn Squash Stuffing

Bake stuffing in a acorn squash for a unique place setting and presentation of this yummy Thanksgiving side dish recipe.



Ingredients:

  • 2 stalks of celery
  • 1 onion
  • 2 cups of chicken broth
  • 1 stick of butter
  • 1 bag of cubed stuffing
  • 2 acorn squash
  • Olive oil

Directions:

Preheat oven to 325.

Split acorns in half. Remove pulp and seeds. Place acorns on a baking sheet. Coat with small amount of olive oil. Bake in oven for 20 minutes.

While acorns are in the oven, melt butter in a pan. Dice聽onions and celery. Add veggies to the butter over a medium heat. Saute onion and celery, do not let them brown.

Add chicken broth. Continue cooking on medium heat until comes to a boil. Remove from heat and stir in stuffing聽until聽well coated.聽 Scoop mix into each squash.

Bake at聽325 for 1 hour.
