Cactus Sugar Cookies


I was able to create a cookie to represent the state of Arizona in the Better Homes and Gardens “State Cookie Contest”.  I decided to make cacti and have them standing in cinnamon sugar “sand”.  My kids had SO much fun helping me and were so excited to see it on the computer!  Here is the recipe for the sugar cookies and the frosting…

Cactus Sugar Cookies

Sugar Cookies-

1 Cup Salted Butter
1 1/3 Cups Powdered Sugar
1 Egg
1 1/2 tsp Vanilla
1/2 tsp Almond Flavoring
2 1/2 Cups Flour
3/4 tsp Baking Soda
1 tsp Cream of Tarter
1/4 tsp Salt

Mix butter and sugar together until blended.  Add egg, vanilla, and almond flavoring. Mix well.  Slowly add dry ingredients.  Put dough in fridge for 2-3 hours.  If you can’t wait you don’t HAVE to refrigerate it.  Bake at 375 for 6-8 minutes.

Sugar Cookies & Frosting Recipe

Butter Cream Icing –
3 3/4 Cups Powdered Sugar
1/3 Cup Butter
2 Tbsp Prickly Pear Syrup
Milk if needed

Mix all ingredients slowly.  You don’t need to soften the butter, it works better when it’s cold.  If you can’t find Prickly Pear syrup, you can use 2 tsp of vanilla.

Prickly Pear juice or syrup is at Safeway and a couple other grocery stores.
