Everything but the Kitchen Sink Oatmeal Cookies


I love pumpkin more than just about any other flavor, but sometimes using canned pumpkin in recipes throws the texture off- especially with cookies.聽 So I created a cookie that gives a hint of my favorite fall flavor with a whole bunch of the runners up included and called it a聽Fall Everything But The Kitchen Sink Oatmeal Cookie. Because there is a whole lot of everything going on in here, using traditional pumpkin spice flavors gives you the hint of pumpkin without the cakey texture that canned pumpkin can give. The texture is perfect and the flavor is right on fall- but that will not stop me from enjoying them year round. Take these cookies and make them your own. You can use white chocolate chips, butterscotch chips, pecans, raisins – whatever you聽have on hand or are craving,聽but they are amazing exactly as they are.

Everything but the kitchen sink oatmeal cookies



Ingredients:

  • 2 cups all purpose flour
  • 1 陆 cups quick cook oats
  • 2 sticks melted, unsalted butter
  • 戮 cup light brown sugar
  • 陆 cup granulated sugar
  • 1 egg
  • 1 tsp. vanilla extract
  • 1 tsp. baking soda
  • 1 Tsp. Pumpkin Pie Spice
  • 1 Tsp. Nutmeg
  • 1 Tbsp. Cinnamon
  • 陆 cup dried cranberries
  • 陆 cup chocolate chips
  • 陆 cup walnuts

 

Directions:

Preheat oven to 350. Lightly coat baking sheet with non- stick cooking spray.

Combine flour,baking soda, pumpkin pie spice, cinnamon, and salt together in a large bowl.

In a separate bowl combine melted butter, brown sugar, and granulated sugar until well combined. Whisk in egg thoroughly.

Pour wet ingredients into dry and stir well.

Fold in oatmeal, cranberries, chocolate chips, and walnuts until just mixed.

Drop large overflowing Tablespoons of dough onto cookie sheet.

Bake for 12-14 minutes or until edges are slightly brown.

Allow cookies to cool ( I usually scarf down two while they are still warm)

Store in an airtight container for 7-10 days.

*Tip- To keep cookies soft add a piece of bread to container and keep changing it out when it gets hard. The cookies absorb the moisture from the bread and remain soft and fresh.

Don’t be afraid to mix-up this recipe and make your own additions, swaps, or substitutions. That’s the best thing about these cookies as they are great with just about anything added in so try subbing in your own favorite toppings.
