Bacon Stuffed Chicken Recipe

I love bacon, who doesn’t? In fact, bacon can almost be called a dessert here in my home! I was put to a challenge to give my favorite bacon recipe a new twist with Farmer John’s newest bacon! Farmer John is taking their bacon to another level with bacon that is cured with seasonings and spices to give it a whole new combination of flavors. Their new Mild Jalapeno Bacon brings in just a kick of spice with the same bacon flavor you love.

Farmer John has a whole collection of recipes on their website and a brand new Pinterest page to inspire you to cook with bacon, now there’s something to love! To get you brainstorming for your next bacon filled recipe, I’m going to share one of my favorite bacon recipes. Once in a while my husband will make me cheese and bacon stuffed chicken, and it always has me begging for him to cook his bacon stuffed chicken again!

Ingredients:

  • 4 slices Farmer John Mild Jalapeno Bacon
  • 4 boneless, skinless chicken breasts
  • 1 cup Monterrey Jack cheese, grated

 

Bacon Stuffed Chicken

Start by frying up your Farmer John Mild Jalapeno bacon in a skillet until thoroughly cooked. You’ll want to prepare your bacon before you’re ready to get started, so it has time to cool properly.

When your bacon has cooled, crumble it up into small bits.

Lay your chicken breasts on a cutting board. Press down on the chicken breast with your palm to slightly flatten. You want to make a cut on the short side of the breast (think the ends) choosing the round not point end. Carefully insert a sharp steak knife in the center of the side of the breast making one small cut. Use the knife to carefully enlarge the hole on the inside, creating a pocket. You need to be careful during the step to not make a hole in the pocket or cut the knife outside of the breast. Doing it this way will leave you a very small exterior hole which will keep your stuffing in nicely.

Now, alternatively stuff grated Monterrey Jack cheese and bacon crumbles, pressing them deep into the pocket you created. Continue stuffing until full, approximately one piece of bacon and a 1/4 cup of cheese per breast.

Grill your chicken for 15-20 minutes, until cooked through. Sprinkle lightly with lawry’s seasoning salt to add flavor to your chicken.

You can also top the breasts with a creamy cheese sauce, if desired. Top with additional bacon crumbles, for a stronger bacon flavor. Serve with a side green or macaroni salad or your favorite vegetable.

  3. Alternatively stuff grated Monterrey Jack cheese and bacon crumbles, pressing them deep into the pocket you created. Continue stuffing until full.
  4. Grill your chicken 15-20 minutes, until cooked through. Sprinkle with Lawry's seasoning salt while grilling.
