Ingredients:
  • 4 slices Farmer John Mild Jalapeno Bacon
  • 4 boneless, skinless chicken breasts
  • 1 cup Monterrey Jack cheese, grated
Directions:
  1. Start by frying up your Farmer John Mild Jalapeno bacon in a skillet until thoroughly cooked. When your bacon has cooled, crumble it up into small bits.
  2. Lay your chicken breasts on a cutting board. Press down on the chicken breast with your palm to slightly flatten and hold firmly. Cut on the short side of the breast (the ends) choosing the round not pointed end. Carefully insert a sharp steak knife in the center of the side of the breast making one small cut. Use the knife to carefully enlarge the hole on the inside, creating a pocket.
  3. Alternatively stuff grated Monterrey Jack cheese and bacon crumbles, pressing them deep into the pocket you created. Continue stuffing until full.
  4. Grill your chicken 15-20 minutes, until cooked through. Sprinkle with Lawry's seasoning salt while grilling.
