Raspberry Chocolate Chip Cookies


I tell my husband every year that I want sweets for Mother’s day! Forget the flowers, I need chocolate!! This Raspberry Chocolate chip cookies recipe is quick and yummy and a perfect way to get the kids involved making mom something with chocolate this year!

Pick up some Raspberry M&M’s in the candy aisle at Target or Wal-Mart and you’re ready to go. These cookies would also be really cute for a anniversary or valentine’s day with their fun colors.

Raspberry M&M Chocolate Chip Cookies

Ingredients:

  • 1 cup butter, room temperature
  • 3/4 cup sugar
  • 3/4 cup brown sugar, packed
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon raspberry extract
  • 2-1/4 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 eggs
  • 1 cup semi-sweet chocolate chips
  • 1 cup Raspberry M&M candies

Start by preparing your baking sheet by lining it with parchment paper and preheating your over to 375° F.

Cream together your butter and sugars in a medium mixing bowl. Next, add the extracts and stir together. Sift in the flour, salt and baking soda and mix to combine. Beat in the eggs until the mixture is creamy.

Now, just toss in the chocolate chips and Raspberry M&M’s and mix lightly until just combined. Drop your cookie dough by tablespoonfuls onto your prepared baking sheets. Bake 9-11 minutes until golden brown.  Cool for 5 minutes before removing to a wire rack to completely cool.

The raspberry extract and M&Ms really add a pop of unique flavor to the classic chocolate chip cookies. They will quickly become a favorite!
