Pumpkin Chocolate Chip Cookies


What smells remind you of fall? For me, nothing ushers in fall like the aroma of crispy leaves falling from the trees, apple cider simmering on the stove, and pumpkin chocolate chip cookies baking in the oven. Just this past week as I pulled a batch of hot pumpkin chocolate chip cookies from the oven, I thought to myself, “It finally feels like fall!”

I got this easy and delicious pumpkin chocolate chip cookie recipe a few years back from a very close friend. We would make these cookies ALL THE TIME in college and take them door to door to the boys’ apartments. These extremely moist cookies were crowd-pleasers and caused the boys to come knocking on our door. Enjoy!

Usher in fall with this delicious and easy pumpkin chocolate chip cookie recipe.

Ingredients:
  • 16 oz pumpkin
  • 1 cup vegetable oil
  • 2 T milk
  • 2 t vanilla
  • 2 cups sugar
  • 2 eggs
  • 4 t baking powder
  • 3 t baking soda
  • 4 cups flour
  • 1 bag chocolate chips
Directions:
  1. Preheat the oven to 375
  2. Combine and mix pumpkin, oil, milk, vanilla, sugar, and eggs
  3. Add baking powder, baking soda, and flour to pumpkin mixture
  4. Stir in 1 bag of chocolate chips (I typically use milk chocolate)
  5. Spoon golf-ball sized balls of cookie dough onto greased cookie sheet
  6. Bake for 8-10 minutes
  7. Makes 3-4 dozen cookies

These cookies really are to die for! Every time I bake them for friends, I get many compliments pertaining to the cookies’ moist texture. Because this recipe makes so many cookies, I love delivering them to neighbors and friends to help welcome the Halloween season! Although semi-sweet chocolate chips work just fine, using milk chocolate chips take these pumpkin chocolate chip cookies to the next level.
