Preserve Fruits and Vegetables & Tomato Cucumber Salad Recipe

Since we’ve been eating better in my home, I’ve been having trouble finding a way to preserve fruits and vegetables. 聽Sometimes I only use part of a veggie when I make a salad or an omelet. 聽Putting the leftover veggies in a plastic baggie never seems to keep if fresh or intact for long.

When Good Cook asked some bloggers to try out their produce keepers, I knew I had found a better way than plastic baggies to preserve fruits and vegetables. 聽We were given the cantaloupe, banana, tomato, lemon, grapefruit, asparagus and green pepper keepers to try out.

I really enjoyed using them all. 聽It was great to have a place to keep asparagus cut and in water, like you are supposed to. 聽My daughters only seem to eat a half of banana at a time, so the banana keeper came in handy as well. 聽My favorite though, was the tomato keeper. 聽I use a half of tomato, just about every day, and the tomato keeper made sure the leftover tomato was fresh and not crushed.

Tomato Cucumber Salad Preserve fruits and vegetables with Good Cook

My husband works outside..in Arizona..in 112 degree weather. 聽When he comes home, he’s hungry, but he doesn’t want anything too heavy. 聽He also doesn’t want something hot. 聽He’s been cooking all day in the heat! 聽He really enjoys a Tomato Cucumber salad.

Quick and Easy Tomato and Cucumber salad for one. This salad has a bit of spice that gives it's cool flavor a zip! Add cooked shrimp to enjoy a Mexican style shrimp cocktail.

Serves: 1-2
Ingredients:
  • 1 cucumber (peeled)
  • ½ large tomato
  • 1 avocado
  • A handful of fresh cilantro
  • ½ Cup of vegetable juice
  • 2 tablespoons lemon juice
  • 1 tablespoon hot sauce (i.e., Red Devil or Tabasco) or more if desired.
  • optional: onions
Directions:
  1. Chop vegetables and cilantro.
  2. In a bowl, add lemon and vegetable juice, toss to combine.
  3. Add hot sauce (more or less as desired) to combine.
  4. Can be refrigerated or eaten immediately.

Not only are Good Cook‘s produce keepers great to preserve fruits and vegetables, but they are super cute! 聽I found my girls playing store with my keepers one night. 聽They would make an excellent gift for the foodie in your life.

  1. I would love the Citrus Keeper in the lemon shape as I make lemon water everyday with half a lemon and have no good way to storing the extra half. So this would be perfect, thank you so much for the wonderful giveaway!

  2. I’d like to try the Asparagus Keeper for storing herbs, like cilantro or parsley. I think it would work great–the herbs could be kept fresh with water in the bottom and probably last a long time.
