Quick and Easy Tomato and Cucumber salad for one. This salad has a bit of spice that gives it's cool flavor a zip! Add cooked shrimp to enjoy a Mexican style shrimp cocktail.

Serves: 1-2
Ingredients:
1 cucumber (peeled)
½ large tomato
1 avocado
A handful of fresh cilantro
½ Cup of vegetable juice
2 tablespoons lemon juice
1 tablespoon hot sauce (i.e., Red Devil or Tabasco) or more if desired.
optional: onions
Directions:
Chop vegetables and cilantro.
In a bowl, add lemon and vegetable juice, toss to combine.
Add hot sauce (more or less as desired) to combine.
Can be refrigerated or eaten immediately.
