I have been looking for a way to add variety into our breakfast routine and add in a recipe that would be simple to make and feed a bunch of people at once. I have been wanting to try out a breakfast casserole with my family, and finally took the step since I had all the products on hand thanks to my June Dairy purchase! Here’s the recipe, which we really enjoyed and will be making again!
Breakfast Casserole
Melt 1/4 cup margarine and spread at the bottom of a 9″ by 13″ baking pan. Spread Simply Potatoes Hash Browns at the bottom of the pan. Sprinkle chopped vegetables including 1 small sweet onion, 1 small green pepper, 2 medium tomatoes on top of the hash browns. Add salt and pepper (to taste) and a 1/2 lb of spicy breakfast sausage, browned. Beat 12 eggs and pour on top of the vegetable/meat layer. Bake at 350 degrees for 45 minutes.
Remove from oven and sprinkle 3 cups of Shredded cheddar cheese evenly across the casserole. Bake another 5-10 minutes until the cheese is melted and bubbly. Remove from the oven and let set for 5 minutes. Cut into 3″ squares and serve with a spatula. Enjoy!
We served our meal with a big cup of orange juice and it was the perfect complement! This breakfast casserole would also be great to serve with fruit!

- Salt & Pepper

- Beat 12 eggs and pour on top of the vegetable/meat layer.

- Bake another 5-10 minutes until the cheese is melted and bubbly. Remove from the oven and let set for 5 minutes.
