I’m always looking for ways to sneak in veggies. I find in our family, we have to get creative and make them look appealing, or my kids won’t give them a second glance no matter how good they may taste.
I stumbled across this pin for Parmesan Baked Zucchini and it was the first time zucchini looked totally appealing to me! I wanted to mix it up a bit, and include my kids go-to flavor by using a ranch seasoning mix. The baked zucchini turned out great!

Ranch Baked Zucchini
Ingredients:
- 2 fresh zucchini’s washed and sliced length wise
- 2 Tbsp vegetable oil
- 2 Tbsp ranch powder
- 2 Tbsp garlic powder
- 1 tsp cayenne
- 2 tsp paprika
Directions:
Preheat your oven to 350 degrees. Now, place zucchini slices into a 9×13 baking dish. Pour or brush vegetable oil over the zucchini slices, coating the zucchini.
Sprinkle the top of your zucchini slices with garlic powder, cayenne, and paprika. Finally, top with ranch powder.
Bake on the first side for 20 minutes. Turn over the zucchini slices and bake for an additional 30 minutes.
In the end, you’ll end up with these delicious Ranch Baked Zucchini bites. They not only taste good, they look pretty, too! They will serve as a perfect side dish with a chicken entree, or whatever else you may be serving.
