Cinnamon Roll Cheesecake Bars Recipe

Cinnamon Roll Cheesecake Bars

Yummy cinnamon roll inspired cheesecake bars! A perfect treat recipe for brunch or Easter!

Ingredients:

Crust – 

  • 12 whole graham crackers
  • ¼ cup sugar
  • 1/2 cup unsalted butter,melted

Filling –

  • 1/4 cup unsalted butter
  • ½ tablespoon cinnamon
  • ½ cup brown sugar
  • ¼ tsp vanilla
  • 1 tablespoon flour

Cheesecake –

  • (2) 8oz packages of cream cheese, softened
  • 1 egg, room temp
  • ⅓ cup sugar
  • 2 tsp vanilla

Powdered Sugar Glaze –

  • 1 cup powdered sugar
  • 2-3 tablespoons milk

Directions:

Preheat oven to 350 degrees.  Prep baking pan with cooking spray.

Crust –

Using your food processor pulse the graham crackers until fine crumbs are made. Add sugar and pulse to combine. Pour in the melted butter. Pulse another 30 seconds. 

Using your hands press mixture into prepared pan. Bake at 350 degrees for 5 minutes.

Cinnamon Roll Filling – 

Combine butter, cinnamon, and brown sugar in a saucepan. Stir until butter is melted and ingredients are combined over medium heat. Remove from heat, adding in vanilla and flour.

Cheesecake Layer – 

Whisk together egg and sugar until fluffy.

Mix in the cream cheese and vanilla. Add this mixture to the top of baked crust.

Drop spoonfuls of the cinnamon roll filling over the cheesecake layer. Spread it with a butter knife. Bake at 350 degrees for 20 minutes or until cheesecake is set.

Set aside to cool for 30 minutes.

Powdered Sugar Glaze Layer –

Combine powdered sugar and 2 tablespoons of milk. Add additional powdered sugar or milk as need until you have a consistency that will easily pour from the tip of your spoon, but isn’t too thin.

Transfer to the fridge to continue cooling. Store in airtight container in fridge.

  3. Cinnamon Roll Filling: Combine butter, cinnamon, and brown sugar in a saucepan. Stir until butter is melted and ingredients are combined over medium heat. Remove from heat, adding in vanilla and flour.
  4. Cheesecake Layer: Whisk together egg and sugar until fluffy. Mix in the ream cheese and vanilla. Add this mixture to the top of the baked crust.
  5. Layer & Bake: Drop spoonful's of the cinnamon roll filling over the cheesecake layer. Spread it with a butter knife or rubber spatula. Bake at 350 degrees for 20 minutes or until cheesecake is set. Set aside to cook for 30 minutes.
  6. Glaze: Mix together 1 cup of powdered sugar with 2 tablespoons of milk. Add more milk or more powdered sugar as needed, until you have an icing that can pour off the tip of a spoon, but isn't too thin. Drizzle the powdered sugar glaze across the top. Then transfer to the fridge to continue cooling. Store in airtight container in the fridge.

Notes

Prepare the filling while your crust bakes! Then, prep the cheesecake layer while your filling cools. Assemble, bake, and enjoy!
