Cinnamon Roll Cheesecake Bars Recipe

Yummy cinnamon roll inspired cheesecake bars! A perfect treat recipe for brunch or Easter!

Ingredients:

Crust – 

  • 12 whole graham crackers
  • ¼ cup sugar
  • 1/2 cup unsalted butter,melted

Filling –

  • 1/4 cup unsalted butter
  • ½ tablespoon cinnamon
  • ½ cup brown sugar
  • ¼ tsp vanilla
  • 1 tablespoon flour

Cheesecake –

  • (2) 8oz packages of cream cheese, softened
  • 1 egg, room temp
  • ⅓ cup sugar
  • 2 tsp vanilla

Directions:

Preheat oven to 350 degrees.  Prep baking pan with cooking spray.

Crust –

Using your food processor pulse the graham crackers until fine crumbs are made. Add sugar and cinnamon together. Then pulse to combine. Pour in the melted butter. Pulse another 30 seconds. 

Using your hands press mixture into prepared pan. Bake at 350 degrees for 5 minutes.

Cinnamon Roll Filling – 

Combine butter, cinnamon, and brown sugar in a saucepan. Stir until butter is melted and ingredients are combined over medium heat. Remove from heat, adding in vanilla and flour.

Cheesecake Layer – 

Whisk together egg and sugar until foamy.

Mix the cream cheese, egg, and vanilla until smooth. Add this mixture to the top of baked crust.

Drop spoonfuls of the cinnamon roll filling over the cheesecake layer. Spread it with a butter knife. Bake at 350 degrees for 20 minutes or until cheesecake is set.

Set aside to cool for 30 minutes, then transfer to the fridge to continue cooling. Store in airtight container in fridge.
