Southwestern Buffalo Chicken Bowl Recipe

This has been one of those weeks where I feel like I’m living out of my car. I mean, why do I even pay for a house anyway? I go to work all day, then this kid needs to be here, that kid needs to be there. Short of ordering pizza every night of the week, which by the way I totally did tonight, I need balanced, tasty dinner options that I can make fast. Because seriously, who has time to spend hours on dinner every night anymore? If you do, maybe we can just come eat at your house.

Southwestern Buffalo Style Chicken Rice Bowl

Enter in Southwestern Buffalo Chicken Rice Bowl thing. Yes, I named it myself. I created it, I get to name it right? I’m pretty sure that’s how it works. Anyway, I found this Cooked Perfect Fire Grilled Chicken at my local Frys grocery store. It was fairly easy to find just sitting there in the freezer section with all the other frozen things. If you need help finding it you can just click this link to Find a Store and it will tell you. They even had a few different flavors and cuts of chicken. They have Lemon Herb, Wildflower Honey, Bourbon BBQ and more. There are 8 different flavors in 5 different cuts from Drumsticks to Tenders and Chunks. For my purposes, I grabbed the Buffalo Ranch flavor because I was looking for something zesty and with a Southwestern taste. Now because I’m busy more than I would like to be, I eat out more than I really should….. Therefore, I feel like I’m knowledgeable about what all the cool kids are eating nowadays. So let me tell you, rice bowls are hip. That’s why I created a rice bowl. Not only is it hip, but it tastes good and was simple to make. Southwestern Buffalo Chicken Bowl Recipe

Ingredients:

  • 1 Box of Spanish style Rice (can of diced tomatoes)
  • 1 Can of Corn
  • 1 Can of Black Beans
  • 1 Bell Pepper
  • 1 Onion
  • Cooked Perfect Fire Grilled Chicken, Buffalo Ranch Chunks
  • Toppers (Avocado, Lime, Cilantro, Tortilla chips)

Directions:

Cook the box of rice according to the directions on the box. My box called for a can of diced tomatoes, which I really thought added a yum factor. Slice the bell peppers and onion into strips and throw them in a pan over medium heat. Cook them until they’re your desired sogginess. Yeah some people like their veggies more crunchy still, others like them flimsy and soggy. Do what makes you happy.

Here’s the hard part. Open your cans of corn and black beans. Put them in bowls and microwave them until they are warm. If I have to be totally honest with you, I didn’t even do this, I just mixed it in with the hot rice and that made it hot. Heat up the Cooked Perfect Fire Grilled Chicken. The best part about this chicken is that it is already cooked. All you need to do is warm it up. You can microwave it, or bake it in the oven or toaster oven. Whatever you prefer to do to heat it up. When the rice is done, mix in the corn, black beans, bell pepper, onion and Buffalo Style Fire Grilled Chicken.

If you want a little pizzaz and to feel fancy, you can add some extras to the top. These can include avocado, cilantro, tortilla chips or you can even squeeze a lime over the top.

The hardest part of making these bowls was waiting for the rice to cook. Well, that and trying to awkwardly videotape myself making this so I could create a video for you. The family loved it though, it was a hit. The best part about it is that it’s totally customizable and can be made super quick thanks to Cooked Perfect’s Fire Grilled chicken.
