Sausage Potatoes Eggs  Skillet

Breakfast is my favorite meal of the day. It’s a meal that’s easy to plan, prepare, and eat and there is still a lot of variety to choose from to keep breakfast interesting. One super easy, and quick, meal you can add to your routine is our yummy sausage, potatoes & eggs breakfast skillet recipe! It’s full of flavor and works great as a campfire meal, too!
It’s one of those breakfast meals that are perfect to eat, any time of the year! Trust that you. and your family will love this simple and delicious breakfast skillet recipe!

HOW TO MAKE A BREAKFAST SKILLET:

Ingredients:

  • 10 links of sausage
  • 2 cups diced potatoes
  • 6 eggs
  • 2 bell peppers, chopped
  • 1 scallion, chopped
  • 10” Cast Iron Skillet
  • Olive Oil
  • 1 cup of cheddar cheese

Directions for Sausage Potato Egg Skillet:

Coat bottom of a cast iron skillet with olive oil. Fry your sausage links until all sides are brown. Remove from pan, and set aside for later.

In the same pan, place diced potatoes, scallions and peppers. Cook on a medium heat until potatoes are brown and veggies are all soft.

Add the sausage back in the pan.

In a separate bowl crack all 6 eggs and whisk. Add the eggs to the pan and cook over a medium heat until eggs are no longer runny.

Top with cheddar cheese and serve.

I was originally inspired by this breakfast skillet pin, but wanted to make it own with my favorite breakfast food – sausage!

This breakfast skillet recipe pairs perfectly with toast if you want to add something on the side or some fresh fruit like cantaloupe. Or it’s perfectly filling as is with a bigger helping. You can make up a big batch, and then freeze leftovers and heat them up for a quick morning meal with no fuss, too.
