Cheesy Fiesta Chicken One Pot Meal

I am always looking for kitchen shortcuts. I’m eager for ways to speed up meal prep as it feels like I spend so much time cooking and cleaning up after meals. I love it when I find a recipe that can all be cooked together in one pot!

I tried this new recipe the other day, from Knorr, and it was so easy with just about 10 minutes of prep and one pot to clean up at the end of the day!

Fiesta Chicken Skillet

Cheesy Fiesta Chicken Skillet

To make this recipe, you will need one large pot or a deep dished skillet. Gather a few basic ingredients that you likely already have on hand and you’ll be ready for dinner in no time.

Ingredients:

  • 1 package Knorr Rice Sides – Chicken flavor
  • 1 can (15.5 oz.) corn, drained
  • 1 can (15.5 oz.) black beans, rinsed and drained
  • 1 can (5 oz.) canned chicken, drained
  • 2 slices American cheese or 1/2 cup shredded Monterrey Jack cheese

Fiesta Skillet One Pot

You start by cooking the Knorr Chicken flavored rice and then add in the rest of your ingredients all to one pot and allow your food to cook. Since this is Knorr’s recipe, head over to print/save the Cheesy Fiesta Chicken recipe from their site. They have it already formatted for easy printing.

When the meal was done, I dished up some for everyone and served the meal with a side bread, and topped with salsa. Next time, I’ll serve it with tortilla chips and salsa. The salsa added a kick of flavor and made this recipe really good! Since you don’t add any seasonings and the chicken starts plain, it does need salsa or something similar to add big kick of flavor.
