Lasagna Rolls

  • 1 package lasagna noodles
  • 1.5 cups spaghetti sauce
  • ½ red bell pepper - diced
  • ½ green bell pepper - diced
  • 1.5 cups ricotta cheese
  • 1.5 cups mozzarella cheese, reserve ½ cup for sprinkling on top
  • 1 tsp Italian seasoning
  • Handful of fresh basil leaves (I used around 10 leaves)
  1. Drop your lasagna noodles in boiling water and cook for 7-8 minutes, until soft.
  2. Dice your peppers, and stir together in a bowl with spaghetti sauce.
  3. In a separate bowl, combine ricotta, 1 cup mozzarella, and Italian seasoning.
  4. Once your noodles are soft, spread out a piece of parchment on a baking sheet, and lay each noodle down on it, side by side.
  5. Spread a layer of ricotta on top of each noodle, leaving the edges free.
  6. Follow that with a layer of sauce, making sure to smooth out any uneven lumps.
  7. Sprinkle chopped basil leaves on top.
  8. Once your noodles are fully covered, roll each one up loosely, being careful not to squeeze anything out of the sides.
  9. Spread a little sauce to cover the bottom of a square baking dish, and then carefully fill it with your noodle rolls, seam side down.
  10. Drizzle remaining sauce on top, followed by your reserved half cup of cheese, and finally more basil leaves.
  11. Bake at 350 degrees for 30-35 minutes.
