Serves: 12 donuts
  • 2 cups flour
  • ¾ cup buttermilk
  • ½ cup sugar
  • 2 eggs
  • ½ tsp baking soda
  • ¼ cup + 1 tbs vegetable or coconut oil
  • 1 tsp vanilla extract
  • ½ tsp salt
  • ½ cup finely diced strawberries
  • Gallon zip top bag
Strawberry Icing Ingredients:
  • 2 cups powdered sugar
  • 1 tbsp milk (add more if it is too stiff)
  • ¼ cup pureed fresh strawberries
  1. Heat oven to 350 degrees. Whisk together flour, baking soda, sugar, and salt to mix thoroughly.
  2. In a separate bowl, whisk together buttermilk, oil, vanilla, and eggs thoroughly.
  3. Pour this mixture into your dry mix bowl, stir until just combined, then fold in your strawberries.
  4. Pour your completed batter into a zip top bag and seal. Cut off a large corner.
  5. Spray a donut pan with nonstick and then pipe your batter into it, making sure it is just level with the pan but doesn’t spill out over.
  6. Bake for 12 minutes, then cool on a wire rack.
  7. When donuts are completely cooled, dip one side of each into your icing and set aside to harden.
  8. To make the strawberry icing, whisk powdered sugar, milk, and strawberry puree together until smooth.
