Banana bread is the best way to use up those ripe bananas but these are so tasty you will buy ripe bananas just to make them. The bread is moist and buttery and the oatmeal nut topping will add a sweet crunch you’ll love. Your house will smell so good when baking these your family will wander into the kitchen waiting for them for them to finish. One will not be enough!

Ingredients:
  • Muffins:
  • 3-4 ripe bananas
  • ⅓ cup melted butter
  • 1 cup of sugar
  • 1 egg beaten
  • 1 tsp vanilla
  • ¼ cup orange juice
  • 1 ½ cups all-purpose flour
  • ⅛ tsp salt (or just a pinch)
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • Topping:
  • ¼ cup oats
  • ¼ chopped walnuts
  • 2 tbsp brown sugar
  • ½ tsp cinnamon
Directions:
  1. Preheat oven 350 degrees and prep your cupcake pans.
  2. I love using my food processor but with this recipe you can use a mixer or even blend by hand.
  3. In a large bowl mash up those bananas, you can decide the consistency you like. I prefer to leave a little banana chunk in there but nice and smooth works great too.
  4. Add in you butter, sugar, beaten egg, oj and vanilla.
  5. In a separate bowl mix up your dry ingredients; flour, salt, baking soda, cinnamon, and nutmeg. Add your flour mix to the banana mixture and blend well.
  6. In a small bowl mix all the topping ingredients; oatmeal, walnuts, brown sugar, and cinnamon.
  7. Fill your prepared cupcake about ½-¾ of the way.
  8. Sprinkle topping on each muffin.
  9. Bake for 1 hr.
  10. Cool on rack.
  11. Enjoy anytime!
