Crouton Parmesan Chicken

Ingredients:
  • 16 oz package of croutons
  • 2 cloves garlic
  • 2 sprigs fresh parsley
  • 1 pound thin sliced boneless skinless chicken
  • 2 eggs
  • ½ cup flour
  • ½ cup milk
  • ½ cup olive oil
  • 1 cup shredded parmesan
Directions:
  1. Wisk together eggs and set aside, place flour in a bowl and set aside, place milk in a bowl and set aside.
  2. In your food processor combine croutons, cheese, garlic and parsley place on pulse until croutons are crumbled.
  3. Dip each piece of chicken in milk, next flour, egg, then your crouton mix. Repeat with each piece of chicken and set aside.
  4. Heath olive oil in a cast iron pan on a medium heat. Place a single layer of chicken in the pan. Allow to cook 2-3 minutes or until golden brown. Turn chicken over and allow to brown. Make sure your chicken is no longer pink on the inside or 160 F.
