Christmas Cookies ~ Holiday Ginger Cookies

Spiced ginger cookie with royal icing decorations.

  • ½ cup softened butter
  • ¾ cup light brown sugar
  • 1 large egg at room temperature
  • 1 tsp vanilla extract
  • 1½ cups flour
  • ½ tsp ginger
  • ½ tsp nutmeg
  • ¾ tsp cinnamon
  • ⅛ tsp ground cloves
  • ¼ tsp salt
  1. Preheat oven to 350 degrees
  2. In bowl of stand mixer, combine softened butter and light brown sugar. Blend on medium for 2 minutes until mixture is fluffy.
  3. Add egg and vanilla to butter mixture and continue mixing on medium until very smooth.
  4. Mix dry ingredients together in a separate bowl and gradually add the cream mixture at low speed until completely combined.
  5. Drop cookie dough by heaping tablespoons onto non stick cookie sheets. Cookies should be spaced 2½"-3" apart.
  6. Bake in preheated oven for 11-13 minutes. Remove from oven and cool on baking sheet for 5 minutes before transferring to cooling rack. Allow cookies to cool completely before decorating.
