Render sausage in nonstick skillet until browned and crumbling. Remove sausage from skillet but reserve grease/oil from cooking for gravy.
Turn to low/medium heat and mix in flour making certain to scrape the bottom of the pan for sausage bits.
The flour/grease mixture will form a smooth paste. For richer flavor allow this to cook for 3-4 minutes and brown.
Increase heat to medium/high and gradually pour in milk stirring constantly to avoid clumps. Add in evaporated milk and stir combining well. Cook for 3-4 minutes on medium heat.
Reduce to low, taste and add salt and pepper to taste. Serve over freshly made biscuits or with toast.
