Healthy Zucchini Muffins

Serves: 18 muffins
- ½ cup soft butter
- ½ cup oil
- ½ cup applesauce
- 2 cups Sucanat or Coconut sugar
- 1Tablespoon Vanilla
- 3 eggs
- 3 cups shredded Zucchini
- 3 cups spelt flour
- 1 tsp. salt
- 1 tsp. baking soda
- ¼ tsp. baking powder
- 3 Tablespoons Cinnamon
- 1 cup chopped nuts
- Start by creaming together butter and sucanat (sugar) then mix in all the other wet ingredients.
- Add all dry ingredients and stir together.
- Scoop into greased muffin tins. And bake at 350 degrees for about 20 minutes. I usually check them at 18 to make sure I don't over bake them.
- Take out onto cooling rack and then enjoy.
