Swedish Pancakes Recipe

I often experiment by switching up the filling for the Swedish Pancakes: Strawberries, Nutella, Cinnamon Sugar, etc.

Serves: 5
  • 1½ c all-purpose flour
  • 1 Tbsp sugar
  • ½ tsp baking powder
  • ½ tsp salt
  • 2 c milk
  • 2 eggs
  • 2 Tbsp melted butter
  • ½ tsp vanilla
  1. Mix flour, baking powder, and salt
  2. Stir in remaining ingredients
  3. Beat until smooth (hand beater works best)
  4. Lightly butter or spray a 6-8 inch skillet
  5. Pour ¼ c of batter onto butter skillet on medium heat and immediately rotate skillet until a thin film of batter covers the bottom
  6. When most of the bubbles have popped, turn with spatula and cook until light brown
  7. Fill with maple syrup and peaches
  8. Roll up and sprinkle lightly with powdered sugar
