Swedish Pancakes Recipe

Serves: 5
- 1½ c all-purpose flour
- 1 Tbsp sugar
- ½ tsp baking powder
- ½ tsp salt
- 2 c milk
- 2 eggs
- 2 Tbsp melted butter
- ½ tsp vanilla
- Mix flour, baking powder, and salt
- Stir in remaining ingredients
- Beat until smooth (hand beater works best)
- Lightly butter or spray a 6-8 inch skillet
- Pour ¼ c of batter onto butter skillet on medium heat and immediately rotate skillet until a thin film of batter covers the bottom
- When most of the bubbles have popped, turn with spatula and cook until light brown
- Fill with maple syrup and peaches
- Roll up and sprinkle lightly with powdered sugar
